KUTCHI ALOO RECIPE
I chose the recipe which is almost “forgotten recipe” recipes now a days. The recipe is originally from Kutch,Gujrat and called Kutchi aloo ( potatoes in kutchi style). This is very simple and easy recipe. I don't know why it is just forgotten. Traditionally the recipe was made on Old-classic gas stove i.e. Chula and because of this chula, recipe got an exotic smokey flavor which make this simple dish dramatic. It has also a unique flavor of asafoetida(hing). However, I made this recipe on regular gas stove. It requires boil potatoes and onions as a main ingredients.
Ingredients
- Potato boiled – 2 medium size
- Salt – to taste
- Onion- 1 medium size
- Red chili powder – 1 tsp
- Turmeric Powder – a pinch
- Oil -1 tsp
- Cumins – ¼ tsp
- Mustard seeds – ¼ tsp
- Asafoetida- ½ tsp
- Lemon juice – ¼ tsp
- Garam Masala – a pinch [optional]
- Coriander leaves – for garnishing
Instructions
- If you don’t have potatoes ready then first pressure cook them for 7-8 mins on medium flame.
- Dice onions and boiled potatoes.
